A ryokan is a traditional Japanese inn with a history spanning
centuries. It is characterized by traditional features such as tatami
mats, futon beds, and the Japanese concept of hospitality known as
"omotenashi." Here, guests experience Japanese culture through regional,
seasonal cuisine and can relax in onsen (hot spring) baths. Instead of
solid walls, fusuma, which are sliding, opaque paper doors, are used. |

Tonight we'll be eating the traditional multi-course Kaiseki Ryori meal.
Kaiseki is one of the most refined cuisines in the world. For us food
lovers, a trip to Japan wouldn't be complete without having experienced
a Kaiseki meal at least once. |

A selection of beautifully prepared, bite-sized appetizers begins the
meal. Soup is an integral part of a Kaiseki menu, typically containing
vegetables, tofu, or seafood. Sashimi consists of thinly sliced raw
fish, complemented with soy sauce and a touch of wasabi paste. Nimono is
a dish prepared by simmering vegetables and meat in a mixture of soy
sauce, sweet cooking sake, and sugar. The yakimono dish consists of
grilled fish or meat. The sunomono dish features vegetables and seafood
dressed with a vinegar-based sauce. |
